Introduction
Your body is busy all day. It moves, thinks, grows, repairs small injuries, keeps warm, fights germs, and replaces old cells. To do these jobs, it needs nutrients: useful substances that come from food and drinks.
A food can contain several nutrients at the same time. For example, beans contain carbohydrate, protein, fibre, vitamins, minerals, and water. This is why learning about nutrients is different from simply memorising food groups.

In this course, you will learn about six major nutrient groups: carbohydrates, proteins, fats, vitamins, minerals, and water. You will also study fibre, an important type of carbohydrate found in plant foods.
By the end, you should be able to explain what each nutrient does, name useful food sources, compare foods, and design balanced meal ideas. Remember that people have different needs because of age, activity, health, culture, allergies, and other factors.
What Is a Nutrient?
A nutrient is a substance the body uses to function, grow, and stay healthy. Nutrients have different jobs. Some mainly provide energy, some help build and repair body tissues, and others help control important body processes.
Scientists often group carbohydrates, proteins, and fats as macronutrients because the body needs them in relatively large amounts. Vitamins and minerals are called micronutrients because the body needs smaller amounts of them. Water is also needed in large amounts, although it does not provide food energy.
Carbohydrates, proteins, and fats can provide energy. Vitamins, minerals, and water do not directly provide calories, but they are still essential because the body cannot work properly without them.

Energy Nutrients and Body-Building Nutrients
Carbohydrates: Everyday Fuel
Carbohydrates include sugars, starches, and fibre. During digestion, many carbohydrates are broken into glucose, a simple sugar that cells can use for energy. Your brain, muscles, and other organs all need a steady supply of energy.
Starchy foods such as oats, rice, bread, pasta, potatoes, and other grains are common carbohydrate sources. Fruit, milk, beans, and vegetables can also contain carbohydrates.

Whole grains keep more parts of the grain than refined grains. They can provide fibre as well as vitamins and minerals. Fibre is not digested in the same way as starch, but it helps food move through the digestive system and supports gut health.
Proteins: Growth and Repair
Proteins are made from smaller building blocks called amino acids. Your body uses them to build and repair muscles, skin, organs, blood components, enzymes, and parts of the immune system.
Protein comes from both animal and plant foods. Beans, lentils, peas, soy foods, nuts, and seeds are useful plant sources. Eggs, dairy foods, fish, poultry, and meat are other sources.

During childhood, protein is especially important because your body is growing. However, protein is not the only nutrient needed for growth: energy, vitamins, minerals, fats, and water also matter.
Fats: Energy, Cells, and Vitamin Absorption
Fats provide concentrated energy. They are also part of cell membranes, help insulate the body, and help the body absorb the fat-soluble vitamins A, D, E, and K.
Foods such as nuts, seeds, vegetable oils, avocado, and oily fish can provide unsaturated fats. Some foods such as butter, fatty meats, pastries, and many processed snacks can contain more saturated fat. A balanced diet includes some fat, with unsaturated fats usually preferred more often.

You do not need to label one food as completely "good" or "bad". It is more useful to look at the whole pattern of foods eaten over time.
Micronutrients: Small Amounts, Important Jobs
Vitamins
Vitamins are organic substances needed in small amounts for normal body functions. Different vitamins do different jobs.

A varied diet is usually the best way to obtain vitamins. Supplements are not a replacement for a balanced diet and should only be used when appropriate with guidance from a responsible adult or health professional.
Minerals
Minerals are elements the body needs for structures and body processes. Like vitamins, they are needed in different amounts and have different jobs.

Fruit and vegetables can provide many vitamins, minerals, fibre, and water. Different colours often come from different plant compounds, so eating a variety of plant foods is a simple way to increase variety.
Water and Hydration
Water is a nutrient even though it does not give the body calories. Water is part of blood and cells. It helps transport nutrients and waste, supports chemical reactions, lubricates tissues, and helps control body temperature through processes such as sweating.

Your water needs can change with activity, weather, health, and the foods you eat. Drinks provide water, but foods such as fruit, vegetables, yoghurt, and soup can also contribute.
Signs that you may need more fluid can include thirst and darker urine, but hydration needs are individual. During sport or hot weather, regular drinking is especially important.
From Food to Body Cells
Eating food is only the beginning. During digestion, the digestive system breaks large food molecules into smaller molecules that can be absorbed.
Carbohydrates can be broken down into simple sugars such as glucose. Proteins are broken down into amino acids. Fats are broken into fatty acids and other smaller components. Many vitamins, minerals, and water can be absorbed without being broken into the same kind of building units.
Most nutrient absorption happens in the small intestine. The bloodstream then carries many absorbed nutrients around the body, while some fats travel first through the lymphatic system.
Food Groups and Nutrients Are Not the Same
A food group sorts foods by shared features and common nutrient patterns. A nutrient group sorts the substances inside foods. A simple food guide may place a food mainly in one food group, but that food can still contain several nutrients.
For example, beans are often placed in a protein-food group, yet beans also contain carbohydrate, fibre, vitamins, minerals, and water. Milk is often placed in a dairy group, yet it can provide protein, carbohydrate, fat, calcium, vitamins, and water.

Food guides can help you think about variety, but they are not exact pictures of what every person must eat at every meal. Culture, health needs, allergies, availability, and family choices can all affect what a balanced diet looks like.
Reading Food Labels Like a Scientist
A food label can help you investigate what is inside a packaged food. Look for the serving information, energy, fat, carbohydrate, sugars, fibre, protein, salt or sodium, and any listed vitamins or minerals.
When comparing two similar foods, make sure you compare the same amount. The "per 100 g" or "per 100 ml" information can be useful because it gives both foods the same reference amount.
The ingredient list tells you what the food is made from. Ingredients are normally listed from the largest amount to the smallest amount by weight at the time the food was made.
Do not judge a food by one number alone. A useful comparison asks several questions: What nutrients does the food provide? How much is usually eaten? What other foods are part of the meal? How often is it eaten?
Building a Balanced Pattern
No single food supplies every nutrient in the right amount for everyone. A varied pattern of foods makes it easier to obtain the nutrients your body needs.
A balanced pattern can include vegetables and fruit; grain foods, especially whole grains; protein foods such as beans, lentils, eggs, fish, poultry, tofu, nuts, or seeds; dairy foods or suitable alternatives; and sources of unsaturated fat. Water is an important drink choice.

Healthy eating is not a competition for a "perfect" plate. Think about balance across a day or week, enjoy a variety of foods, and respect different cultural food traditions.
